Jeanne Marie’s Vi-Star Cookie Version (Gluten Free and lower sugar)

I decided to make my version of these Visalus Cookies because I cannot eat wheat and other people posted difficulty with the recipe as originally written ( it is at the end of the post for those who want to see it) 

These cookies are not overly sweet as baked, obviously if you decorate with a sugar icing it will increase the sweetness. Overall I was pleased with the way these turned out.  For the sake of my Challenge, I made my cookies using small cookie cutters so I wouldn't overindulge =D

Ingredients:
1 Cup Vi-Shake mix (2 scoops equals roughly 1/3 of a cup)
1 ¾ Cup Pamela’s bread flour (do not use yeast packet) or other gluten free flour mix
1 tsp Xanthum Gum
1/2 tsp. baking powder
1 tsp. baking soda
2 eggs
 1 1/2 tsp. vanilla extract
1 stick (½ cup) of butter softened
1 Cup sugar substitute of choice
½ cup of granulated sugar (may be good with confectioner sugar as well)

Directions: Preheat oven to 375 degrees. 
Mix dry ingredients. 

Cream together wet ingredients including the sugar. 

Gradually mix in dry ingredients to wet ingredients.   
 
CHILL dough for 1 hour in refrigerator.   

Roll out dough on lightly floured surface—I rolled out 1/3 of the mix at a time. Cut out cookies with cookie cutter of choice and place on cookie sheet covered with parchment paper.



Sprinkle colored sugar or leave undecorated to garnish later. 


Bake 6-8 minutes. Cool.


*I baked mine for 5 minutes, then checked to see if edges were barely light brown—that’s when you want to take them out.  Oven temps vary so start on the low end of the time and move up 30 seconds to 1 minute at a time until desired color. 

Original Vi-Star Cookie recipe:       
Ingredients: 2 scoops Vi-Shake mix, 2 3/4 c. flour, 1 1/2 c. sugar, 2 eggs, 1/2 tsp. baking powder, 1 tsp. baking soda, 1 tsp. vanilla extract, 1 block salted sweet cream butter, softened.
Directions: Preheat oven to 375 degrees. Mix dry ingredients. Cream together wet ingredients. Gradually fold in dry ingredients to wet ingredients. Roll out dough. Cut out cookies. Bake 6-8 minutes. Cool.

Vishape Protein Brownies


Vishape Protein Brownies

1Cup ViShape
2/3 Cup Canola Oil or 2 sticks of melted butter ( I used the oil)
1 Cup Baking Splenda or other SF baking product OR you can use 1 ¾ cup brown sugar
1 tsp Vanilla Extract
¼ Cup flour of choice (I used Rice)
¾ Cup Carob Powder or cocoa powder (Unsweetened)                         
2 eggs
4 egg whites
2 Packets of Cardia Care
Chocolate chips to sprinkle on top




Heat oven to 350*  Spray an 8x8” pan with nonstick cooking spray or line with parchment paper.

In a bowl, combine the flour, Vishape, sweetener, Carob or cocoa powder and Cardia-care packets.  Add eggs, egg whites, oil and vanilla extract.  Mix in mixing bowl until well mixed and no flour is visible. 
Pour batter in the pan and sprinkle evenly with chocolate chips. 
Bake 20-25 minutes until center is level and firm.  You can usually can tell when done when a toothpick inserted in the center comes out clean.   
Makes 16 brownies.  Stored properly these will last for several days.

Banana-Nog ViShake


More Seasonal Flavors!



SO Nog Coconut Milk 3/4-1 Cup depending on your taste preference
1 Banana
2 Scoops ViShape
Ice
Water
1 tsp SF Vanilla pudding mix

Blend together, pour into a glass and top with a little nutmeg and cinnamon

Egg Nog ViShape Shake

Love the Holiday Season and the seasonal flavors it brings!  I found SO Coconut Milk Egg Nog today at Safeway and decided to make a shake with it.  I used 1/2 Cup of the coconut milk egg nog, 5 ice cubes, 2 scoop Vishape, and some plain coconut milk mixed with water.  Blended in my oster, poured into a 16 oz glass, topped with some whipped cream and a sprinkle of nutmeg.  You could also use the SILK Soy Egg Nog if you prefer Soy, I just don't although I've tasted it and it tastes good.

Apple Cinnamon Vishape Muffins





2 Eggs
1/2 Cup Honey (or ¼ cup honey and ¼ cup brown sugar)
1 Cup Applesauce
2 Teaspoons Vanilla Extract
1 1/2 Cups ViShape Protein Powder
1/4 Cup All-Purpose Flour (I used rice flour)
1/2 Teaspoon Baking Soda
1/4 Teaspoon Baking Powder
1 Teaspoon Allspice
1/2 Teaspoons cinnamon
1/4 teaspoon salt

Mix all wet ingredients then add the dry. Pour into a Silicone 12 cup muffin pan, bake in a 350* oven for 18-20 minutes.  Let cool.

Pumpkin Spice ViMuffins


Modified version of the Pumpkin Spice Vishape Bars posted earlier on this blog

2 Eggs
1/2 Cup Honey

2 Teaspoons Vanilla Extract

1/4 Cup All-Purpose Flour (I used rice flour)

1/4 Teaspoon Baking Powder
1 Teaspoon Pumpkin Spice
1/4 Teaspoon Ground Cloves
1/2 Teaspoons cinnamon
1/4 teaspoon salt

Mix all wet ingredients then add the dry. Pour into a Silicone 12 cup muffin pan, bake in a 350* oven for 18-20 minutes.  Let cool.

Pumpkin Spice ViCookies



1 Cup Pumpkin Puree
1/4 c. applesauce
1/2 tsp. cinnamon
1/2 tsp. pumpkin pie spice
1/4 c. ViShape protein powder
1 tbsp. agave nectar or honey
1 tbsp. molasses
1 tbsp. cinnamon
2 c. rolled oats
1/2 c. raisins or dried cranberries or chocolate chips

Preheat oven to 300 degrees. Combine ingredients in a bowl, stirring until well combined. Drop cookies onto baking sheet covered with parchment paper and press down. Bake for 15-20 minutes.

Oatmeal Cherry ViCookies




 3 ripe bananas
1/3 C unsweetened applesauce
2 c. rolled oats
3 scoops ViShape
1 tsp vanilla extract
1 Tbsp flax meal
1/2 cup dried cherries (or raisins or cranberries)

 
Preheat oven to 350 degrees. Using a fork, mash the bananas in a bowl. Stir in oats, applesauce, dried cherries, flax and vanilla extract. Mix batter well. Drop by rounded spoonfuls onto a parchment paper-lined cookie sheet. Bake for 20 minutes.
Make 20-24 cookies depending on size. 

Pumpkin Spice ViBars



2 Eggs
1/2 Cup Honey
1 Cup Pumpkin
2 Teaspoons Vanilla Extract
1 1/2 Cups ViShape Protein Powder
1/4 Cup All-Purpose Flour (I used rice flour)
1/2 Teaspoon Baking Soda
1/4 Teaspoon Baking Powder
1 Teaspoon Pumpkin Spice
1/4 Teaspoon Ground Cloves
1/2 Teaspoons cinnamon
1/4 teaspoon salt

Mix all wet ingredients then add the dry. Pour into an 8x8 oiled baking pan, bake in a 350* oven for 25-30 minutes.  Let cool.

*Pictured with maple flavor cream cheese icing
mix 6 Tablespoons cream cheese, 2 Tbsp Vanilla NF Greek Yogurt and 1-2 Tablespoons SF Maple syrup.  Add confectioners sugar until a drizzle consistency reached.  You can make less at first, I have way more "drizzle" then I needed--AND the bars are moist and delicious with no drizzle too :)

Banana Strawberry ViShape with Muscle




Get the benefits of fresh spinach without the taste--you will be surprised  how good this shake is! ~JmF~
  • 1 Cup Unsweetened Almond Milk
  •  2 Scoops ViShape 
  • 1 ViTrim (optional) 
  • 1/2 frozen banana
  •  1/2 cup fresh spinach
  •  5 frozen strawberries
  • 1/4 cup low sugar orange juice ( or Orange Defense Mix In) 
  • ice, blend and enjoy! 

BANANA MAPLE WALNUT VISHAKE


I decided to make this shake after an experiment the evening before when someone I know on Facebook was talking about a picture of some havalina and a comment about a bacon shake.  I made the bacon shake but was thinking that I love banana bread.  So here is what I came up with the next morning.  Adjust the syrup and pudding mix to your sweetness and creaminess/thickness preference.  Enjoy!

  • 1/2 frozen banana  
  • 2-3 scoops ViShape
  •  a few squirts of sugar free maple syrup
  •  1tsp or 2 of sugar free vanilla pudding mix
  • a couple walnut halves
  •  1 cup of nonfat milk or nondairy liquid of your choice
  • ice and blend

Pumpkin Spice Via ViShake


SO Good and SO Easy!!
1 Cup unsweetened Almond Milk or Non Fat milk
(Or whatever Milk/nondairy beverage you prefer) 1Packet Starbucks Pumpkin Spice Via
2-3 Scoops ViShape Protein 
2 Teaspoons Sugar Free Vanilla Pudding Mix
Ice and water depending on how thick you 
like your shakes

Put liquids in first, then add rest of ingredients, blend and enjoy!  Top with a little low fat or non fat whipped topping and a sprinkle of pumpkin pie spice or nutmeg if you like!

Pumpkin Spice Latte ViShake


 2 scoops ViShape, 1/4 cup pumpkin puree, Pumpkin Pie spice to taste, tsp sugar free vanilla pudding mix, 1/2 cup cold coffee 1/2 cup almond milk or NF milk, ice, blend and top with a little light whipped cream--If you want a thicker consistency shake, add more pumpkin and pudding mix  

No Bake Protien Bites


ViSalus No Bake Energy Bites- 1 Cup oatmeal, 1/2 C peanut butter, 1/3 cup honey, 1 C unsweetened coconut flakes, 1/2 c flax meal, 4 scoops ViShape  
1 tsp vanilla. Mix together, roll into balls and put in fridge. Made 36 at 56 calories 6 carbs 3 fat 2 protein for each bite.

Pistachio ViShake


1 Cup Skim milk, sf pistachio pudding mix, 2 scoops ViShape, ViTrim ( (optional), 5 pistachios, ice and water depending on how thick 
you want it.~JmF~
